- 53 Steaks cut 1” thick: 6 New York, 6 Prime Rib/Bone-in Ribeye complete with fat cap , 4 Tenderloin, 3 Top Sirloin, 10 Chuck, 7 Inside Round, 6 Outside round, 3 Top Sirloin Cap/Tri-Tip, 4 Flank (one cut that will make 4+ portions), 4 Eye of Round

- 55 and ¾ lbs Lean Ground Beef (our blend is measured as a true Lean, not dry while not too fatty)

- 4 packs short ribs, 2 Cross Rib Roasts

  • 1 Brisket

  • Soup bones, Dog Bones

  • Suet, the proper kidney fat to make tallow for cooking or hand/body cream
